Sopapilla Cheesecake

Ok...so this is one of my most requested desserts ordered and recipes people ask for!  I used to give it out until I decided to cater and heard it's not such a good idea to give out your recipes!   BUT  I actually LOVE to share.  I love to share food and I love to share recipes.  So, I'll keep it on my catering list but you won't have to order it (unless you'd like to, but it's sooo easy!!!  So, I doubt you will )   You'll need:

2 cans crescent rolls OR the Pillsbury's Cresent recipe starters (cresent "sheets")
1 stick of butter
2 8oz cream cheese at room temp
1 tsp vanilla
1 1/2 c sugar (divided)
1 tsp cinnamon

Preheat oven 350*
Get out your 9 X 13 pan
Cream your cream cheese, 1 tsp vanilla and 1 cup of the sugar until smooth.  Line your pan with one can of cresent rolls (you can spend the time smoothing the seams together, I don't) Pour your cream cheese mix over the crescent roll, smooth out.  Unroll crescent rolls into rectangles (or use the recipe starters) and place on top of cream cheese mixture.  Pour your melted butter on top of the crescent roll sheet.  Mix 1/2 cup of sugar and 1 tsp of cinnamon together and sprinkle on top of melted butter.  Bake at 350 for 30 minutes.
Serve warm and gooey or cold and creamy :)

FLUFFY Pancakes!

Who doesn't like wonderful  fluffy pancakes.  We do!  We have pancakes every Saturday...give or take.

Here's how I make our pancakes

1 1/2 cups flour
1 T baking powder
1 tsp salt
1 T sugar (I know I know...you're going to add syrup to them but it does make them a bit sweet)
1 1/4 c milk
1 egg
3 T melted butter
1 tsp vanilla

Sift together the dry ingredients into a bowl.  Make a well in the center, mix and  pour the liquid ingredients into the dry ingredients until slightly smooth.  
Heat a griddle or frying pan to medium and pour batter in 1/4 cup for each pancake.  Brown on both sides.

TIP:
I like to melt my butter in the frying pan I am going to cook the pancakes in.  I start melting it before I start sifting.  By the time I sift and measure everything else out the butter is melted and ready to pour in batter.  Plus, my pan is hot and buttered.

Also I wait for the pancakes to bubble before flipping to make sure the middles are cooked well.

BBQ Chicken Sandwiches

Who doesn't like BBQ Chicken and super easy cooking?  Here's a way super easy way to do BBQ chicken sandwiches.

1 whole chicken
2 bottles of your favorite bbq sauce

Put a whole chicken and 1 bottle of  your favorite bbq sauce in a crock pot on low for 5 hours (give or take)  Take the chicken out, drain the liquid,  and debone the meat.  Shred your chicken and then mix it with your second bottle of bbq sauce.  Warm (or just mix) and serve with hamburger buns.

We like wheat buns and a little mozzarella sprinkled on top.

Now...if don't want to do any deboning, I suggest using chicken breasts...you probably wouldn't need the second bottle because you might not have the excess of liquid.   Throw the breasts in with a bottle of bbq sauce, cook, and shred.

Pizza Sandwiches

Here's something my kids love!  I think it's pretty good too.  Who doesn't love a grilled cheese sandwich.  This isn't a follow to the "T" type recipe.  It's a fast fun food! 

You'll need :
whole wheat bread (or your favorite sliced bread)
mozzarella
butter
oregano
garlic powder
pizza sauce

So it's a mozzarella grilled cheese with pizza sauce for dipping. Get your favorite frying pan or grill and melt butter.   Take your bread sprinkle with shredded mozzarella, sprinkle with oregano and garlic powder and grill :)  Warm your favorite pizza or marinara sauce for dipping your grilled mozzarella sandwich. We used Paul Newman's Marinara sauce.  We cut them in four triangles for perfect dipping.   Serve with a salad.

Personalize them...add pepperoni or any of your favorite pizza toppings.
